The Beans.
These beans come to us from Santa Ana, a region known for producing some of El Salvador’s best coffee due to it’s fertile volcanic soil. These are SHG beans (Strictly High Grown), meaning they are grown above 1200 meters and results in a more nutrient dense cherry. These coffee cherries take more time to develop, which translates into a fuller flavor profile but also means more labor intensive farming practices for the various farmers who contributed to this lot. El Salvador is known for high quality coffee and these beans are no different.
